Veggie & Cheese Quiche - Gigi Siguenza

Veggie & Cheese Quiche

Type - Main Dish, Vegetarian (not Vegan, there IS dairy and eggs in this)

Creator - Gigi Siguenza

Yields - 6-8 slices, depending on how ya cut it


Ingredients

Any Premade Deep Dish Pie Shell

Broccoli about 1/2 cup broken down to smaller flourettes

Zucchini about 1/2 cup diced small

Carrots about 1/2 cup shredded

Cheddar Cheese about 1/2 shredded

Eggs 6

Half & Half or Heavy Whipping Cream 2/3 cup


Spices

--------------------

Basil (pinch)

Cayenne (very tiny pinch)

Onion powder (dash)

Garlic powder (pinch)

Paprika (couple dashes)

Salt & Pepper (to taste)


Directions

----------------------

- Prebake the pie shell per directions (this prevents it getting soggy while cooking)

- Layer broccoli, zucchini, carrots

- Whisk eggs and half/half in a bowl, add spices

- Pour mixture over veggies in pie shell

- Sprinkle cheese on top


- Bake at 375 for 30 - 35 mins (till fork comes out clean with a slight touch of damp egg)

- Let cool settle for 10 mins before serving


Serves 8 if small slices (good served with a salad) or 6 medium slices ( good lunch) or 4 big as a main dish


Notes

You can pretty much sub any veggie you like for one of those listed, and can use any cheese you like. The key is the proportions, so the pie is not over full or under full, and the eggs cook/lift properly.
