Basil Romano Gnocci - Gigi Siguenza

Basil Romano Gnocci

---------------------------

Type – Pasta

Creator – Gigi Siguenza

Yields – 6 1-cup servings

Ingredients

----------------

4 large baking potatoes

2 large eggs

1 tbsp of olive oil

2 cups flour

1 tbsp crushed basil (if fresh, diced very very fine)

1 tbsp crushed oregano (if fresh, diced very very fine)

½ tsp salt

½ tsp ground thyme

½ tsp of black pepper

½ cup grated romano cheese

½ cup grated parmesan cheese

Prep

----------

- Peel potatoes, place in large pot with enough water to cover them completely, boil until tender

- Remove potatoes from water and let sit just long enough for them to be cool enough to handle but still quite warm

- Using a potato ricer, rice all the potatoes into a bowl (you can use a potato masher if that’s all you have, just be sure not to over mash)

Make Dough

- In a small bowl, add eggs, olive oil, and all ground spices, then whisk and set aside

- in another bowl, add flour all crushed herbs, and grated cheeses, and whisk to distribute evenly

- Once all potatoes are riced/mashed, make a well in the center and pour egg mixture into well

- Use a paddle type spoon, turn egg into potatoes until distributed

- Using your hand, begin to knead dough in the bowl while adding flour mixture to the potato mixture

- When the dough is silky, firm, and slightly sticky, stop kneading

- NOTE - Resist the urge to keep adding more flour and over knead – the longer you knead, the more flour you add, the heavier the gnocci will be

Make Gnocci

Lightly flour surface and roll out the dough to about ½ inch thick

Here you can choose whichever cutting method you prefer from the following

- cut long ½ inch wide strips of dough, then roll like ropes to smooth out edges, then cut ½ inch pieces off the rope

- OR

- Cut long ½ inch strips one way, then cut across those strips the other way, to make ½ squares

- Once all the pieces are cut, you again have several options for how you shape your gnocci

- Traditional gnocci has a slight shell type shape with ridges along the back, which are attained by using a gnocci board to press/roll the little dough pieces across the ridges on the board, which also curls the dough around your finger

- But since most folks don’t have a fancy gnocci board, you can do the much faster, home made method of simply rolling the little square of dough once across the surface to smooth edges slightly, then pressing gently between two fingers and thumb to create the distinctive curl indentation

- If you want the ridges, simply hold a fork in your hand, with the tines against your first and second finger, and press the little dough piece gently against it with your thumb… this will achieve the ridges and the indent at the same time… play with it until you find a method that works for you

Cook Gnocci

--------------------------

Bring a pot water to boil, adding a dash of olive oil to the pot

Place gnocci into the boiling water (don’t over crowd pot, there needs to be room for them to roll with the boil, so do it in batches if need be)

The gnocci will sink when first placed in the water and will float to the top when they are done

Let gnocci ride the top boil for a minute before scooping out with a large slotted spoon

Place in serving dishes and serve with a marinara sauce

Yields 6 1-cup servings of gnocci (nutrition break down is based on this serving size)

Grandma's Tuesday Night Special - Tina Shelton

Grandma's Tuesday Night Special (Good for low budgets and big families)

Type - Main Dish, Beef, Pasta

Ingredients

1 1 lb box shell macaronni (penne works well also)

1 1/2 lb lean ground beef

2 jars pasta sauce (whatever your favorite is...grandma always used Ragu)

1 1/2 lb shredded mozzarella cheese

1 diced green pepper

1 diced onion

Non-stick cooking spray

11 x 13 baking dish

Aluminum foil


Cook

---------------

Preheat oven to 375. Put pasta on to boil. Meanwhile brown together ground beef, green pepper, and onion until done.

Drain meat and pasta well.

Mix pasta and beef mix together.

Add pasta sauce and mix well.

Spray baking dish with non-stick spray.

Add 1/2 sauced pasta to dish and cover with 1/2 lb of cheese.

Pour in remaining sauced pasta (making sure to spread everything evenly) and top with remaining cheese.

Cover with aluminum foil and bake at 375 for 20-30 minutes.

Remove aluminum foil and bake until cheese is slightly browned (however you like it).

Remove from oven and allow to sit at least 5 minutes.

Serve with your choice of bread (we prefer garlic bread).

Serves 6-10 adults.

Creamy Mac & Cheese - Deloris Ellis

Creamy Macaroni & Cheese

Ingredients

2 cups of uncooked elbow macaroni

4 tablespoons (1/2 stick) butter (cut into pieces)

21/2 cups grated sharp cheddar cheese

3 eggs beaten

1/2 cup sour cream

1 can condensed cheddar cheese soup

1/2 teaspoon salt

1 cup of whole milk

1/2 teaspoon dry mustard

1/2 teaspoon white pepper


Directions

Biol the macaroni in a 2 quart sauce pan with plenty of water until tender about 10 mins. Drain. In a medium sauce pan mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese and add the beaten eggs , sour cream , soup salt, milk , mustard and pepper, stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

Fast & Easy Bowties & Scallops

Fast & Fancy Bowties & Scallops

Yields – 4 Servings


Ingredients:

------------------

Scallops - 6 large

Bowtie Pasta - 1/2 box (uncooked)

1/2 Yellow Bell Pepper (diced)

1/2 Orange Bell Pepper (diced)

1/2 Red Bell Pepper (diced)

4-5 Scallion Stalks (green onions) sliced, including half of the stalk

Crushed or Minced Garlic (to taste, but a tbls is good)

1 Cup of any premade spaghetti sauce

Olive Oil (for saute, bout 2 tbls)

Salt, Pepper, Oregano, Dill, Basil (all to taste)


Prep: 10 Minutes

- Dice and slice all the veggie components and set to the side so they’re ready

- Slice the 6 scallops in half vertically (so you have 12 thinner rounds)

- Put pasta on to boil


Cook: 10 Minutes

----------------------

- Put pasta in boiling water, cook to taste

- While pasta is cooking, put a large skillet on little higher than medium heat and add the olive oil

- When oil is ready, add sliced scallions and garlic, let them sweat a few secs to enhance flavor

- Gently place scallion rounds in the pan, be sure to shift them a little to be sure they aren't sticking

- Sprinkle all the spices over top of scallop rounds

- Let scallops cook about 3-4 mins, flip and let cook another 3-4 mins (be careful they dont over cook and get rubbery)

- Remove scallops when they are cooked, set aside

- Toss peppers into pan and stir/toss generously, sorta stirfry style (I prefer my peppers with some crunch left in them, but you're welcome to cook them until soft)

- When peppers are cooked to taste, add cup of spag sauce and stir so all is blended

- Add scallops back to sauce

- Add drained pasta to sauce and toss


Serve with a nice salad and you're good to go.
