Red Beans and Rice

Ingredients:

1 Ham hock
3cups of pinto beans
1 tablespoon salt
2 tablespoons vegetable oil
3 whole BayLeaf
1 diced Onion
1 half diced green pepper
Prep:

In a slow cooker place ham hock in plenty of water cook on low overnight
Soak beans in cold water over night. Dice onions and green pepper and store in a airtight container in the refrigerator over night.
Directions

Add beans to the ham hock in the slow cooker
Add salt and vegetable oil, Bay leaf and cook on low
Go to work!
When you get home add the onions and green pepper and let cook about 30 mins
Prepare rice
Note: You may add hot links or sausages cut up if you like meat in it.
